Canning continues...........



I love sliced, pickled banana peppers on sandwiches that we occasionally get from Subway. We decided to try them in the garden this year. Considering all the rain we had and very little summer, they did pretty good. We picked a small basket full and processed them in a brine with a little olive oil and a big garlic clove. We have three pints so far. I'll let them set for a month or two and see how they taste. It's fun trying new recipes :)
Next was a family favorite, Bread & Butter pickles. After washing and cutting the ends off we sliced up the cukes and Tom bravely sliced the onions.

He wasn't crying but he was close to it!

The pantry is slowly filling up. We have plenty of zucchini relish from last years harvest and a few jars of peaches. Current jelly and raspberry jam should last as well. Next we will put up Christmas pickles and dill pickles.

We love banana pepper slices. We use them on sandwiches, pizza & to top crackers & cheese. Another yummy way to can them is to stuff them with sauerkraut and can them whole. We use these ones on crackers & cheese as a snack. Just take a pepper out and slice them in the usual rings. This time you get a bite of sauerkraut along with the pepper. Sounds kinds weird but it's pretty tasty.

I remember my Great Aunt stocking up the pantry in the basement. Having those fruits and veggies in the winter was wonderful. They smelled and tasted soooo good. Yours will too!

I wish we would of got cukes in this year but time didn't allow it and we ran out of garden area fast! But I am thinking about pickle zucchini. This weekend it is pickled beets and freezing! Take care and I wish I had a pantry like that! I put mine in the basement in a grey tin cubboard and I hate my basement, cobwebs and yuck! Have a good one.

Your recipe really does sound good. I also like the fact your kids help. My basement is getting fuller, although everything is really slow this year.

Frost is close, we just hope it holds off until the silage is in the pit. We don't make silage, but our neighbors and friends do.

Nothing feels better than a well filled canning shelf. I love that sense of security. I'd love to have some of those banana peppers on this sandwich I'm eating right now.

What a great looking pantry. I have never tried canning. It's always been a little daunting to me in truth. I did manage to make jam this year though.
